The BBFC ratings website has offered a bit of new info regarding what will be on the soon to be released Catching Fire Blu-ray/DVD extras, at least the UK version.
There will be 5 deleted scenes, totalling 5 minutes in length:

The SURVIVING THE GAME - MAKING THE HUNGER GAMES: CATCHING FIRE making-of documentary will be 144 minutes long and will consist of the following:
